I also think it’s safe to say that everyone in the world loves doughnuts. Umm…who doesn’t love doughnuts? NO ONE.
See? I speak the truth.
Well my lovelies, I’ve figured out a way to trick my brain into thinking that these pancakes are doughnuts because….they look just like doughnuts! What a concept! Take regular old pancake batter, stir in some chocolate chips, spoon into a mini doughnut pan and bake! 4 minutes in the oven and you’ve got a seriously fun breakfast that kiddies will just eat up….literally.
Moral of the story: it pays to be late for work when your wife is a food blogger. Also, you will be the coolest Mom on the block if you make these. At least that’s what I told myself last Thursday.

Mini Chocolate Chip Doughnut Pancake Dippers
yield: 4-6 servings, depending on appetites
Ingredients:
1 cup milk
1 egg
2 tablespoons oil or melted butter
1/2 teaspoon vanilla
1 teaspoon vinegar
1 1/4 cups self rising flour
1/2 teaspoon baking soda
1 tablespoons sugar
1/4 cup mini chocolate chips
Directions:
Preheat oven to 325
In a large bowl, whisk milk, egg, oil, vinegar and vanilla together. Pour in remaining ingredients and whisk until mostly smooth. Spoon into prepared pans until half full. Bake 4-6 minutes or until just cooked through and barely brown. Cool 5 minutes then turn upside down to remove. Serve warm with maple syrup.
